Paleo Granola – so yummy!

Paleo Granola (with hazelnuts and cacao nibs)

Ingredients
  • 2 cups hazelnuts
  • ½ cup cashews
  • ½ cup pumpkin seeds ¼ cup sunflower seeds
  • 2 TBS sesame seeds
  • 2 TBS coconut oil, melted
  • ¼ cup raw honey (or REAL maple syrup)
  • 2 TBS sunflower nut butter or almond butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon powder
  • ¼ tsp ginger powder
  • ½ tsp celtic sea salt
  • ¾ cup unsweetened coconut flakes
  • ¼ cup raw cacao nibs
  • ½ cup dried cranberries, raisins, or cherries
Directions
  1. Pulse hazelnuts, cashews, pumpkin seeds, and sunflower seeds in food processor a few times until broken up a bit. Dump into large bowl.
  2. In a small bowl, combine melted coconut oil, honey, and nut butter into a smooth paste. Add vanilla, cinnamon, ginger, and sea salt. Mix thoroughly.
  3. Pour oil/honey mixture over chopped nuts and stir until completely coated. Fold in coconut flakes and sesame seeds.
  4. Either dehydrate at 115’F until completely dry OR use one of the baking methods mentioned above.
  5. Once the granola is completely dry and cool, mix in the cacao nibs and dried fruit of choice.
  6. Store on sealed glass jars either in fridge or in the cupboard. Enjoy!

On the road to 40

When I was little I remember my mother’s 40th birthday party and I thought she was OLD! How many of you remember that day when a parent or an adult in your life turned 40 and you thought they were ancient?

Well, I’m now 364 days away from 40 and I couldn’t feel more young and youthful. It is apparent to me all of the goals that I need to set before me. I want to lose weight, get pregnant (?), adopt a baby (?), let my gray hair grow in naturally, get my house organized, get rid of clutter, spend more time reading scripture, be more intentional with my husband, children, family and friendships…. the list goes on and on. None of these are in any order of priority….just in case anyone wonders. 

Yesterday, my husband gave me a beautiful  journal from World Market in which I’ll use to start my goal setting and thought doodling. I’m excited what God is going to bring in our lives this year. 

So many thoughts to ponder, organize in my head and filter out. Jesus spent 40 days in the wilderness, and the Israelites spent 40 years in the desert. It is my hope that October 4, 2016 will be a symbolic day for me – walking in freedom more and more – and it starts TODAY!
